I think this is one of the things that can really make you climb de walls. How do you manage this? Do you have to do the income tax paperwork on your own? do you have someone doing it for you?

When I had to do my tax return I would always go to an accountant. I found it the easiest way for me to do it. I kept all the relevant receipts that I needed to keep for my job, a log book for the car if it was required and I just took everything to them. I always got a refund when they did it.

I don't need to do returns at the moment but if I needed to do them again I would go back to an accountant. Less headaches that way and you can claim them as a refund (well here you can not sure about elsewhere)
